The TLC episode showed us making BBQ turkey sandwiches for 200 guests, plus a pot of beans (which are always the favorite of the meal). We have received many requests for these recipes. Here they are!
3-Bean casserole
Ingredients:
- 1 can kidney beans
- 1 can pork n beans
- 1 can Lima or butter beans
- 1 lb. hamburger browned (with onions)
- 1/2 to 1 lb. bacon (brown separately and cool, breakup)
- 1/2 c. brown sugar
- 1/2 c. ketchup
Mix everything and add 1/2 cup brown sugar, 1/2 cup ketchup (save some of the bacon grease–and add to this mixture). Cook in crock pot about 1-1/2 hours–or can cook in oven at 350 degrees for about 55 min. Double for a church potluck, or x10 for the Jeub Birthday Bash!
Turkey Sandwiches
Note: You may have to cut this recipe down a bit. This feeds 190 people.
Cook four 20-lb turkeys individually. We prefer electric roasters. Skin and debone the turkeys. Take all left-over meat and gather a #10 can of tomato sauce, 1 bottle of French dressing, 1 bottle of molasses, 1 bag of brown sugar, 1 large jug of ketchup, mustard, and I think that’s it.
Take a very large roasting pan. In the bottom, layer a fair amount of tomato sauce, about 4 cap fulls of French dressing, a really thin drizzle of molassas, sprinkle a handful of brown sugar, 6 cap fulls of ketchup and 3 cap fulls of mustard. Layer an inch of turkey. Repeat till the whole pan (or two) is full.
Bake for an hour, stir it all up, bake for another 20 minutes, and ready to serve on buns. Keep tasting it as you stir, add more ingredients until it tastes awesome.
