Love in the Kitchen - Granola Fruit Bars
As Chris and I say in our Cheaper by the Baker’s Dozen seminar, we make something hearty yet inexpensive on activity nights. This recipe is easy to make and holds the kids off till we get home later in the evening. We then make something to eat as a bedtime snack. These aren’t the flimsy, cheap bars you buy in the supermarket. Get ready for some great fruit bars!
3 cups flour
3 cup oats
1 cup butter, melted
1/2 tsp cinnamon
1/4 tsp salt
1-1/2 cups brown sugar
3 cups of your favorite Microwave Jam
Combine all ingredients and mix in a bowl. Press half of mix in the bottom of a sprayed 9×13-inch pan, top with a quart of jam (see Microwave Jams recipe p. 114). Top with remaining mix and bake at 350 degrees for 15-20 minutes, or until jam is bubbly around the edges.
